Get yourself a Jag workshop manual or Haynes / equivalent for the XJ set that you have if you haven't
already done so .
Or if you are stuck I will press gang my wife into doing a photo shot of those type calipers .

As Chris says it could be a lazy piston in the caliper. Usually rusty or dirty pistons cause the caliper piston to stick. First try lots of brake cleaner at the piston. You could pop out the brake pads and remove the piston dust covers and look at the condition of the piston. The calipiers are accessible and removable with difficulty with the diff still in place. The disc replacement is a different ball game . The lower wishbones need to be removed so its a diff back end drop.

That's the first things you need to do as said by the the last to posts, therefore you need to establish that is
just the hand brake mechanism pads or shoes (my SR has the inboard discs with small disc pads) that are
causing the issue .
If not then you may be looking at sticking Pistons in the hydraulic section of the calipers ?
This I personally would doubt due to the age that you have mentioned, if so callipers will need to be removed, In
my case on my SR would be a bit of pain but not impossible would think similar experience for the AK .
You may have a service hatch for access but in my case I don't and I'm a bit older now !
In theory the handbrake calipers pads should never need replacing unless the handbrake is used for handbrake
turns or has been left on whilst in motion .

Have a look o see if the cable is releasing with the handbrake ratchet. You should be able to feel it with operating the handbrake.
If you can look at the two handbrake levers. They can bind up if the grease dries out but I would not expect after only 2 years. Look to see the two brass prong levers have not popped out that sit on top of the handbrake caliper of the locating holes or broken prongs which act as a tensioner.

Do you have the jag drum brake for your hand brake, if so check the shoes are not over adjusted and causing the problem. Also check your hand brake cable.

Hi

I have an AK 427 which I bought a couple of years ago and it has what appears to be Jaguar inboard discs at the rear. It has just failed its mot as the rear brakes are binding. Anyone any idea how easy (or not) removing callipers and/or renewing discs will be, or any tips on best way to tackle?
